The Champagne Brut Grand Cru Blanc de Blancs by Billecart Salmon is one of the most prestigious and representative labels of this ancient Maison of Mareuil-sur-Ay. Founded at the beginning of the nineteenth century, it has retained a family character and today manages approximately 15 hectares of vineyards in some of the most suitable areas of the Côte de Blancs, almost all of which are classified as Grand Cru. Production has remained faithful to a classic and artisanal style which is summed up in the company motto "finesse, balance et elegance". The label is the maximum expression of Chardonnay, in its full maturity and expressive richness

The Grand Cru Blanc de Blancs by Maison Billecart Salmon is a non-vintage Brut Champagne, which comes exclusively from a rigorous selection of the best Chardonnay grapes coming from prestigious parcels located within the territory of four legendary Grand Cru Côte des Blancs: Avize, Chouilly, Cramant, Mesnil-sur-Oger. At the end of the manual harvest, the bunches are pressed very softly and the free-run must ferments in vats at a controlled temperature with vinification carried out separately for each individual parcel. The base wines rest for a few months, partially undergoing malolactic fermentation, before being assembled for the creation of the definitive cuvée, with the addition of a percentage ranging from 33 to 40% of reserve wines from previous years, which contribute to giving richness and maturity to the wine. The second fermentation takes place in the bottle according to the Champenoise Method, with a period of rest on the yeasts of 6-8 years in the Maison's caves.

Blanc de Blancs produced by Maison Billecart Salmon is a Brut Grand Cru Champagne that perfectly summarizes the unmistakable personality of the great Chardonnays and the mineral characteristics of the chalky and calcareous soils typical of the Côte de Blancs. It is a bottle dedicated to lovers of mature and evolved Champagnes, with a vinous sip and a gastronomic vocation. It presents itself with a luminous golden appearance with brilliant reflections, crossed by a perlage of notable finesse and persistence. The bouquet is broad and rich, with aromas of white pulp fruit, citrus peel, hints of dried fruit, notes of small pastries and fresh almond. On the palate it offers a creamy and aromatically complex, harmonious and enveloping sip, which closes on fresh savory and mineral sensations
