Winemaking: A long history that has its roots in the distant times of the ancient Romans. Some testimonies from local elders regarding illustrations present in the Roman villa of Santa Filica, at the mosaic of Bacchus in the Sorso area, unequivocally confirm the ancient Roman tradition of immersing freshly harvested grapes, transported manually in baskets, in sea waters. Empirical tests had confirmed the benefits conferred on the bunches by contact with the brackish component of sea water, with evident qualitative improvements that will be found in the wine, from the point of flavor, aromatic composition and structure. Centuries later, the Sassu family, owners of Tenuta Asinara, decided not to disperse the tradition so linked to the territory and with the use of technology and a helicopter, they immersed Vermentino grapes in the waters of the gulf of Asinara from which wine was born, unique and unrepeatable. A wine born from the most ancient tradition, capable of offering a unique tasting experience. Immersion of the grapes in exploiting the saline action of the sea water eliminated the protective waxy layer of the grapes (pruina), favoring dehydration and consequently the concentration of the aromatic and gustatory part. Loading of whole, non-stemmed bunches into the press, soft pressing in the total absence of oxygen. Subsequent fermentation in 500lt Tonneau. with stable temperature at 15°C.
Refinement: 8 months in Tonneau on the fine lees at a controlled temperature with bâtonnage and one month of refinement in the bottle.
Color: Intense straw yellow with greenish reflections
Perfume: Fine and persistent, notes of ripe white pulp fruit and iodine, which alternate with light spicy notes.
Taste: The direct effect of the sea salt pleasantly enhances the flavor of the wine which balances perfectly with the softness resulting from the refinement in Tonneau.
